Vegan recipe: Mexican fajitas

vegan Mexican fajitasThere aren’t many good Mexican places in Hong Kong, so the incentive to make my own vegan version of fajitas and tacos is quite big. Here’s what I cooked in less than 30 minutes a few days ago.

Mix half a bag of the veggie meat cubes with one-third packet of the Fajita seasoning well. Slice the onions and bell peppers. Warm the tortillas in microwave for 30 seconds or in the oven at 400F° for 8 minutes. Caramelize the onions and then stir in the veggie meat cubes. Serve it with salsa, guacamole, or whatever you like with your fajitas or burritos.

  • Fajita seasoning – Marks & Spencer
  • Veggie meat cubes – Vegelink
  • Bell peppers and onions – any supermarket
